Necessary products:
1 liter of water
25 gr. yeast – fresh
2 kg. peppers
flour, as much as it takes

Method of preparation:
Cleaned and chopped peppers are boiled in water, then crushed well. The yeast packet is activated by mixing it with a little lukewarm water, salt, a pinch of sugar and some flour. It is added to the water and crushed peppers, flour is gradually added and kneaded. When it has been kneaded very well, it is left to rise for three days. It is then torn with fingers into small pieces, laid out in the sun on a clean surface and allowed to dry in the sun. When it dries, it is broken again, left to dry again, after the second drying, it is rubbed with hands. It is sifted through a sieve, so that the Traan becomes very fine. Store dry in cotton bags. It is usually prepared in the Summer because there is sunshine, and it is a great breakfast for cold winter days.
Preparation of the dish:
A handful of Traan is placed in a suitable container with two glasses of water from the evening to dissolve well. In the morning, put it on the fire, add a little more water, according to how thick you want it to be, and boil it. When cooking, it must be stirred constantly so that it does not form into balls. A porridge with a pleasant aroma is obtained. Boil until slightly thickened. In Razlog, it is served with fried pieces of meat, cracklings and leeks.
